HOMEMADE Christmas pudding crumpets

This works amazingly well - much lighter than its suet-ridden inspiration.

Preparation: 5 minutes Serves: 4 crumpets

Raisins2 tbsp2 tbsp
Fresh ginger (peeled and finely chopped)1 tbsp1 tbsp
Candied peel (finely chopped)2 tbsp2 tbsp
Orange zest1 tsp1 tsp
Soft dark brown sugar2 tsp2 tsp
Dark rum1 tbsp1 tbsp

     

    • Chop the ginger and candied peel, grate the orange zest, then mix all the ingredients with the crumpet batter before cooking. 
    • Needless to say, the crumpets work well with a massive dollop of brandy butter.
