Crumpetwurst

Crumpetwurst! Made for Munchen! It's an Oktober Crumpetfest!

Purists would probably balk at the sauerkraut and currywurst sauce combo, but it works for us.

Yes, we know it's not the most photogenic dish on the planet.

 

Preparation: 10 minutes Serves: 12 crumpets
Cooking: 30 minutes Unbuttered crumpets

Sauerkraut

Sauerkraut (drained weight)250 g8.8 oz

Currywurst sauce
Medium white onions (peeled and very finely chopped)1/21/2

Chicken stock9 floz250 ml
Tomato ketchup6 tbsp6 tbsp
Curry powder4 tbsp4 tbsp
Paprika1 tsp1 tsp
Cayenne pepper1 tsp1 tsp

METHOD

      The sauerkraut

      • We spent several years eating sauerkraut straight from the jar, so imagine our delight when we discovered that cooking it and adding some flavour makes it a heap and half nicer!
      • Melt the butter in a large non-stick pan. Add the onion and cook gently for 10 minutes until the onion is soft.
      • Add the sauerkraut, chicken stock, white wine, juniper berries, cloves, salt and pepper.
      • Bring to the boil, then reduce to a simmer, cover and cook for 20 minutes.

      The currywurst sauce       

      • Melt the butter in a non-stick saucepan. Add the onion and cook gently for 10 minutes until the onion is soft.
      • Add the chicken stock, ketchup, curry powder, paprika, cayenne pepper, salt and pepper.
      • Bring to the boil, then reduce to a simmer and cook for about 10 minutes until the sauce has thickened.

      The sausages

      • Choose your favourite, cook to perfection, and slice into bite-sized chunks.

      The crumpets

      • The sauerkraut doesn't want to be too runny, so use tongs to let the excess liquid drain off before loading onto the crumpet.
      • Add the sausage and currywurst sauce and crack open the Franziskaner!

       

 

As ever, don't forget to use sausages from happy pigs or karma might come to bite you on the arse.
